4 cups milk, cream, broth, water or any combination
salt & freshly ground pepper
1 cup stone ground grits
3 Tbsp butter
2 cups flavorful cheese, grated (sharp cheddar, gruyer, pepper jack)
1 lb raw shrimp, peeled & deveined
6 slices thick bacon
4 tsps fresh lemon juice
2 tbsp chopped parsley
1 cup thinly sliced green onions
1/2 tsp garlic powder
Grits: Bring 4 cups liquid mixture to a boil. Add salt & pepper.
Sprinkle in grits, whisking all the time. Cook until grits are creamy, whisking about every 5 minutes.
Remove from heat & stir in the cheese & butter.
Cover & set aside.
Shrimp: Rinse shrimp & pat dry.
Fry bacon in a large skillet until browned & crisp. Set aside & chop or crumble.
Add 1 Tbsp butter to the hot bacon grease.
Add shrimp & cook until shrimp turn pink. (Do not overcook!)
Add lemon juice, bacon, parsley, garlic & green onions. Stir & saute briefly.
To serve: Spoon grits into individual bowls.
Top with shrimp mixture.
Sere immediately.
